SWEETENERSSugar substitute. Sweetener is a food additive which duplicates the effect of sugar, but usually has less power. Some sugar extracts are natural and some are synthetic. An important class of sugar substitutes are known as high intensity sweeteners. They have a sweetness that is many times that of ordinary table sugar. As a result, much less sweetener is required and the contribution and energy is often negligible.
